Gage Roads Mussels

INGREDIENTS:

1 onion
6 cloves garlic, chopped
Olive oil
Gage Roads Pils (3.5%) beer
2 kg mussels, cleaned and bearded
2 tbsp freshly chopped green herbs (eg: parsley, basil)
Lemon and chilli for serving

METHOD:

  • To a large deep-sided pot or wok add the onion and chopped garlic.
  • Sauté lightly in a little olive oil until soft but not coloured.
  • Add 250 ml of the beer and then throw in the mussels and steam with lid on over heat for 5 minutes.
  • Throw out any unopened mussels and at the last moment toss in the herbs.
  • Serve garnished with sliced lemon and a sprinkle of finely chopped red chilli (optional).
  • Toast some crunchy bread for dunking in the mussel liquid.
