Cauliflower Pizza
Cauliflower Pizza
The difference with this style of pizza is the base is made from cauliflower rather than a dough so it's suitable for people low-carbing or who eat gluten-free foods. It's a little bit of work (not much), and the results are delicious. It's a popular dish in our household. Enjoy! Jane


Ingredients:
Half a cauliflower
2 eggs
500-750g cheese (approx the same amount as cauli; we used pizza cheese from the supermarket)
Pizza sauce (either purchased or make your own using tomato paste and herbs such as basil, oregano, parsley)
Suggested toppings:
salami and/or other meats of your choice (omit for vegetarian option)
tomatoes (chopped or sliced)
olives (pitted)
onion (chopped or sliced – doesn’t need to be cooked first)
mushrooms
capsicums (peppers)
jalopeno chillies
Method:
- Bring a large saucepan of water to the boil and add the cauli chopped into chunks – it doesn’t need to be pretty as it gets blended for the pizza base. When the cauli is cooked (check with a knife when it is tender), drain and let sit for a bit to cool slightly.

- While the cauli is cooking, prepare the toppings and heat up the oven to about 220C - fairly hot.
- When the cauli has cooled down a little, put the cauli into a mixing bowl or large (deep) bowl , add most of the cheese (leaving some for on top of the toppings) and break into the bowl two whole eggs (yolk and whites).

- Using a hand held electric blender (eg: Bamix) though a potato masher would work but take longer, squish and mix up the egg and cauli until it is well blended and a little fluffy. A Thermomix does it in about 10 seconds.
- Using a spatula of some kind, spread out all the mixture onto a round pizza tray, or a rectangle baking tray.
- Pop in the oven (topping-less at this stage) for about 15 minutes to cook the base. It’s really important not to undercook – it needs to be browned and a little crunchy around the edges.
- While the base is cooking, clean up the kitchen and finish preparing the toppings.
- Get the pizza sauce ready.

- Once cooked, bring out tray from the oven, and put on all the toppings – starting with the pizza sauce over the whole pizza – then finishing off with a handful or two of cheese.
- Put back in the oven for about 15 minutes (keep an eye on it) until cheese is melted and toppings are cooked.

And voila! A delicious, healthy pizza.
