Chicken in Orange + Tarragon Sauce

Chicken in Tarragon + Orange Sauce

Serves 4

Ingredients

2 tbsp olive oil
4 chicken breasts, skin removed
1 large onion, chopped
2 oranges, reserve rind and cut orange flesh into bite size pieces
1 chicken stock cube
220ml orange juice
large handful of fresh tarragon
freshly ground pepper

Method

  • Preheat oven to 200C/400F/gas 6.
  • In ovenproof dish ightly brown chicken on both sides and remove.
  • Then add onion and soften.
  • Add orange rind and pieces of orange to the onion.
  • Crumble in stock cube and then add orange juice.
  • Add chicken breasts and mix in well.
  • Sprinkle tarragon over breasts, bring to the boil and simmer for a few minutes.
  • Cover and bake for about 60 minutes or until chicken is tender.
  • Serve with broccoli and brown rice.
