Chicken in Orange + Tarragon Sauce

Chicken in Tarragon + Orange Sauce
Serves 4
Ingredients
2 tbsp olive oil
4 chicken breasts, skin removed
1 large onion, chopped
2 oranges, reserve rind and cut orange flesh into bite size pieces
1 chicken stock cube
220ml orange juice
large handful of fresh tarragon
freshly ground pepper
Method
- Preheat oven to 200C/400F/gas 6.
- In ovenproof dish ightly brown chicken on both sides and remove.
- Then add onion and soften.
- Add orange rind and pieces of orange to the onion.
- Crumble in stock cube and then add orange juice.
- Add chicken breasts and mix in well.
- Sprinkle tarragon over breasts, bring to the boil and simmer for a few minutes.
- Cover and bake for about 60 minutes or until chicken is tender.
- Serve with broccoli and brown rice.
